Last week was a great food week. Besides the recipes listed below, I also made Moroccan chicken in my crockpot--heavy on the veggies, light on the chicken. Plantboy made this meal one night:
It looked almost that pretty. He cleverly added carrots too. The leftover dressing was great later in the week on fajitas.
Our vegetarian selections this week include:
Big Salad (lettuce, black beans, quinoa, corn, green onion, cilantro, lime, etc.)
Roasted Vegetable Sauce over Polenta
The second is on the list for tonight. I hope it is fabulous. I'm very excited. If it is good then I will put up a recipe.
